Baked Potato Wedges
Serves 6
4 large baking potatoes each cut in to six wedges
2 1/2 tablespoons olive oil
salt and pepper
sweet Hungarian paprika
dried herbs to taste; such as oregano thyme basil sage or marjoram
Preheat oven to 400°F. Place the potato wedges in a bowl. Pour the olive oil over them. Toss well to coat. Place the potatoes skin side
down in a shallow casserole dish. Sprinkle lightly with salt, pepper, paprika and herbs. Bake 30 minutes. Turn potatoes over and season again
with salt and paprika and bake for another 5 minutes. Flip over again and bake 8 minutes more or until the potatoes are well browned and tender threw
out. Serve hot with dipping sauce.
Dipping Sauce
1 cup sour cream
1/4 cup mild salsa
hot pepper to taste optional
Combine all ingredients. Cover and chill.
