Cajun Pralines

3 c. pecans, chopped
2 Tbsp. butter
1 c. light brown sugar
1 c. canned cream
2 c. white sugar
2 tsp. vanilla

In a bowl, combine sugars and cream. Place in a saucepan, heated at 250. Cook slowly until thickened. Test to see if it will form into balls by dropping a small amount into cold water. When the balls form, remove from heat. Add remaining ingredients; stir briskly until thickened. Drop large spoonfuls onto wax paper. Sets up immediately.
