Green Chili Casserole
1 can diced green chiles
2 cups low fat cheese
1 cup biscuit mix (like Bisquick)
2 cups skim milk
1 cup egg substitute
½ teaspoon salt
1 tablespoon minced dried onion
2 ounces chopped black olives
1 cup low fat cottage cheese
Preheat oven to 350°. Coat 7x11 baking pan with vegetable spray. Spread green chiles evenly over bottom of pan. Sprinkle with cheese. Whisk next six
ingredients together in large bowl. Gently add cottage cheese. Carefully pour mixture over cheese. Bake 45-50 minutes, or until knife inserted into
center comes out clean. Serves 6.
