Pineapple Salsa
2 cups pineapple -- 1/2" pieces (1/2 medium)
2 tablespoons fresh cilantro or parsley -- chopped
2 tablespoons lime juice
1 small red bell pepper -- chopped (1/2 cup)
1 small red onion -- finely chopped (1/4 cup)
1 small red chili pepper -- seeded and finely chopped (1/2 tsp)
1. Mix all ingredients in glass or plastic bowl.
2. Cover and refrigerate at least 1 hour to blend flavors.
Makes 8 servings, about 1/3 cup each.
