Barbeque Chicken Pizza
Chicken breast
Barbeque sauce
¼ cup shredded mozerella cheese
¼ cup shredded cheddar cheese
¼ cup sliced red onions
¼ cup torn cilantro
Grill chicken over mesquite. Turn once. When nearing doneness, cover with barbeque sauce and continue to grill briefly, turning once more. Remove chicken.
With a wire brush, scrape the grill grid clean. After the chicken has cooled a bit, cut with a sharp knife into strips.
Flatten one piece of dough and grill for one minute. Remove, and on the cooked side, add remaining ingredients save for the cilantro. Grill uncooked side with lid closed until cheese melts. Remove from grill and top with cilantro.
