Crockpot Tamale Pie
3/4 cup yellow cornmeal
1 cup beef broth
1 pound extra-lean ground beef
1 teaspoon chili powder
1/2 teaspoon ground cumin (optional)
1 jar {14-16 oz.} thick and chunky salsa
1 16 oz. can whole-kernel corn -- drained
1/4 cup sliced ripe olives
1/2 cup shredded Cheddar cheese
Directions:
In a large bowl, mix cornmeal and broth; let stand 5 minutes. Stir in beef, chili powder, cumin, salsa, corn, and olives. Pour into a slow cooker. Cover and cook on LOW 4 to 8 hours or until set. Sprinkle cheese over top; cover and cook another 5 minutes or until cheese melts.
