GRILLED KEY LIME CHICKEN
3 lbs. skinless, boneless chicken breasts
1 c. Key West lime juice, or fresh lime
1 T. honey
3/4 c. water
1/2 tsp. black pepper (fresh ground is best)
1/2 tsp. ground thyme (or to taste)
2 T. vegetable oil
1 T. fresh ginger, peeled and grated
Combine all ingredients except chicken (use food processor, blender or hand beater, as Juliet does). Blend until well combined. Pour over chicken; cover and marinade in refrigerator overnight. Grill over hot coals, turning once, until done.
