Grilled Pork Tenderloin Sandwich w/ Peppers & Onions

1 pork tenderloin , approximately 1/2 pound
2 tablespoons Honeycup Gourmet "Original" Mustard
2 tablespoons Extra Virgin Olive Oil
2 large red bell peppers, trimmed, seeded and halved
1 large sweet onion, peeled, quartered and skewered
1 loaf Sourdough bread , sliced in 8 diagonal pieces, each 3/4 inch thick.

1. Preheat grill to medium.
2. Spread 1 tablespoon mustard over tenderloin and grill for 9 to 10 minutes on each side. Slice crosswise into 1/4 inch pieces.
3. Brush peppers and onions on both sides with olive oil. Grill peppers 5 to 6 minutes on each side and onions 8 to 10 minutes on each side, or until tender.
4. Grill bread slices on both sides until lightly toasted. Spread 4 pieces with remaining mustard and layer each with sliced tenderloin, peppers and onions. Salt and pepper to taste. Top with remaining bread slices, cut in half and serve.
