Red Fish And Rice
3 lbs of Red fish
1/4 cup of olive oil
l large onion (diced)
l teaspoon of dried thyme
3 medium fresh tomatoes (diced)
2 fresh basil leaves
l small jalepeno pepper (sliced)
1 cup of med. grain rice (cooked)
1 small green bell pepper (diced)
In saute pan, place onions, peppers and saute until onions
are translucent, place on a plate.
Place half of the olive oil in a frying pan and place
cleaned red fish into the pan.
Cook 3 minutes on each side.
Take fish out of pan and place fish into a 2 quart
cassarole dish and add
peppers onions, tomatoes, and seasonings.
Bake at 375 degrees for twenty-five minutes. During
the last five minutes of the cooking, take dish
out of the oven and place the rice over the
fish and finsh cooking.
